Craving-Buster Breakfast Foods

When starting Let's Do Lunch, if you're a breakfast eater, you should start out each day with a big breakfast consisting of Craving-buster Breakfast Foods... until you no longer crave foods made from white flour, potatoes, white rice and regular sugar.A few of these Craving-buster Breakfast foods follow:

1. Fat-free Refried Beans (no sugar nor cane juice in the ingredients), heated in the micro for approximately 2 minutes and then spread out on your breakfast plate, with Eggs on top (I like mine "over easy" and then I break the yolks)
2. Whole Grain Cereal (no sugar nor cane juice in the ingredients) with cut-up fruit on top, sweetened with Stevia or your favorite diet sweetener.
3. Real Foods Original Corn Thins, eaten plain with your eggs and fat-free refried beans.
4. Whole Grain Fat-free Crispbread (no sugar nor cane juice in the ingredients), again eaten plain with your eggs and fat-free refried beans.

Let's Do Lunch GROUND-CHICKEN SAUSAGE... eat until full
8 oz ground chicken breast (skinless)
½ cup drained & mashed pinto beans
1 egg (use Egg Beaters)
2 tsp Morton's Sausage and Meatloaf Seasoning Mix (if your local grocery store doesn't have this, you can order it...630-595-8919)

Beat egg with fork. Mix in chicken, beans & seasoning. Let set to thicken. Make into patties and fry on grill or pan sprayed with olive oil... makes 4 patties.

Butter-bean Potato Cakes
3 cans large butter beans, cooked & drained
1 cup frozen corn kernels, defrosted & drained well
1/3 cup finely chopped onion
1/3 cup finely diced green bell pepper
3 or 4 T of 99% fat-free chicken broth

Mash or blend the butter beans in a large bowl. (Tip: This is a great way to use up left-overs of the Bill's Mashed Potatoes.) Add the chicken broth & blend until they're smooth & creamy. Add all of the other ingredients & stir together. Refrigerate the mixture for an hour or two before proceeding to the next step. Make into patties, approx. 1/3 cup each. This will make 11 or 12 patties. Heat a skillet on medium/high with 2 T olive oil and cook patties on one side until browned. Turn over and cook on the other side until browned.

Let's Do Lunch POPCORN-FLOUR PANCAKES... eat until full
In large bowl:
2 eggs (use Egg Beaters and beat with whisk)
Add 1 tsp. Splenda
Add ½ cup no-fat skim milk
Add 1 ½ level tsp. baking powder
Stir until baking powder dissolves and batter becomes frothy
Add 2 cups of popcorn flour (see instructions below)
Stir until batter drops into small lumps

Use small amount of olive oil on heated griddle. Drop ¼ cup batter on griddle for each pancake. Serve with blended blueberries or strawberries that have been sweetened with Splenda.

To Make Popcorn Flour:
Place 1 cup at a time of popped popcorn loosely in Magic Bullet Blender (or equivalent). Blend until you have made 2 cups of finely ground popcorn flour.

Apple Pie Smoothie 
1 frozen banana
½ peeled, chopped apple (freeze if you like your smoothie thick!)
1 cup 100% apple juice, non-sweetened
½ teaspoon cinnamon
Pinch of nutmeg

This is a yummy twist on smoothies, if you love apple pie! Control the consistency by adding more or less chopped apple. A sure cure any sweet tooth you might have left.

Tropical Breeze Smoothie
1 frozen banana
4-5 frozen strawberries (no sugar added)
½ cup unsweetened pineapple chunks
¼ cup 100% pineapple juice
¼ cup unsweetened orange juice

Blend well. If needed, add a small amount of non-fat milk if smoothie is too thick for you. Makes approximately 20 oz. of smoothie.
